So after trying out the lemon bars last week I know I needed to try something similar again but I would for sure need to tone down on the lemon zest.
I found that I had some raspberries in the fridge that were about to go bad so I decided that I would make a lemon raspberry dessert of some kind.

I recently (like last weekend) became obsessed with cooking in a mason jar. Why did I never think of this before like seriously. I mean I know that there are many blog post and Pinterest pins out there dedicated to this way of cooking. Anyways it is so nice because you bake directly in these lil jars and then put a lid on it and they fit so nicely in your lunch bag. This is a real time saver and my kids are always thankful for less dishes to put in the dishwasher.

So it was only natural that I would want to cook my dessert in one of these mason jars. So we have a combination of almond flour crust, a layer of lemon and a layer of raspberries. The whole combination is like a sweet and sour candy and it is just sooo yummy.  I will for sure be returning to this recipe in the near future.   1. 1/4 Cup of almond flour
  2. 3 tsp xylitol separated in 3 ( or sweetener of choice)
  3. 2 Eggs
  4. 1 Lemons seeds removed and peeled (keep some zest to taste)
  5. 4 tbsp Butter, unsalted, melted separated in 3
  6. 1 pint of fresh Raspberries
  1. Crust:
  2. 1. Combine Almond flour, 1 tsp sweetener of choice and 2 tbsp melted butter.
  3. 2. divide mixture into 3 different mason jar and press on the bottom( I used wax paper to do this)
  4. 3. Cook in Microwave for 2 minutes at 50% ( or until it is golden brown)
  5. Lemon:
  6. 1. Blend the peeled Lemon, as much of the skin you want for zest, 1 egg, 1tbsp butter and 1 tsp of sweetener.
  7. 2. Pour mixture over the cooked crust in the mason jar and microwave for 1 1/2 minutes at normal temperature.
  8. Raspberry:
  9. 1. Blend the raspberries, 1 tsp sweetener, 1tbsp butter and 1 egg.
  10. 2. Pour over the lemon layer and cook for 2 minutes.
  1. Enjoy warm or let cool depending on how you feel.
  2. Refrigerate the non used portions.
  3. Makes 3 servings
