Keto Low Carb Chicken Quesadilla #Ketolicious

 As I mentioned before I LOVE Mexican food. Gosh what is there not to love about this type of cuisine?? I mean think about it everything is topped off with some oozy gooey melted cheese ahhhhhh yum. Total DELISH!! I am a sucker for quesadilla’s and that was one of the things I missed most since changing my lifestyle to a keto low carb diet. I tried in the past to make my own tortilla’s and it was all very disappointing to say the least. Some of the recipe tasted too much like eggs, others would not even flip in the pan so I had ultimetly decided to give up on being able to enjoy some quesadilla while eating low carb. 

So when I found these flatout flatbread at Walmart I could immediately see quesadillas in my near future. I was soo excited and could barley wait to get home and try to make some.  

While finding these has been a blessing for me please keep in mind that these flatbreads are still pretty high in carb count (9g after you deduct the fiber) so they might not be ideal for everyone but I can manage to incorporate them in my daily intake and normally still stay below my 25g of carbs. 

I also know there are some other brands out there that I could purchase but being I live in a smaller city in Quebec this is all I currently have access to without ordering online. I might be opened to do that in the future so please if you know of some good tasting brands of tortilla or flat breads comment below and I might give them a try.

Ingredients
  1. 1 Flatout Healthy grain flat bread (Low carb)
  2. 6 oz precooked chicken breast chopped up
  3. 2 tbsp of salsa
  4. 1 jalapeno pepper chopped
  5. 1/4 cup of shredded cheese
  6. 2 tbsp of mayo
  7. 2 tsp of tex mex seasoning
  8. * optional 1 teaspoon of favorite sweetener
Instructions
  1. heat up chicken with the slasa, half the jalepeno and half the tex mex seasoning. set aside
  2. In small bowl mix mayo, hale of jalapeno and half of tex mex spice ( you can also add a teaspoon of your favorite sweetener)
  3. Spread the mayo mixture onto the flat bread.
  4. Place flat bread in a pan a low heat with mayo mixture facing up. Spread the cheese evenly on the flatbread.
  5. Add the chicken mixture to one side on flatbread, close the other side over the chicken mixture. Press down with spatula cook until golden brown on one side and flip.
Notes
  1. Enjoy with a side of sour cream or cheese crackers.
